Chicken wing tips are the distal end of the wing, separated from the middle wing section at the joint. They are distinct from drumettes and middle flats and should therefore be quoted as their own poultry cut rather than grouped under a general chicken-wing description.
Product characteristics to specify
A commercial wing-tip specification should state the required size range, skin condition, trimming standard, defect tolerances and whether the product is intended for foodservice, ingredient manufacture or further processing. Buyers should also identify the preferred freezing presentation and whether loose-flowing pieces or another agreed frozen format is required.
Typical commercial use
Wing tips are used in markets where the skin, connective tissue and small-bone structure suit stock, broth, soup, sauce and further-processing applications. They may also be distributed as a lower-cost poultry portion in markets where this cut has established consumer demand.
